Ingredients for 2 servings:
1. 1 medium zucchini
2. 1 tablespoon butter
3. 1 garlic clove, minced
4. 2 tablespoons sun-dried tomatoes packed in oil, coarsly chopped
5. 1/4 teaspoon salt, to taste
Directions:
1. Cut zucchini into 1/2 inch rounds, then cut each round into quarters (you should have about 2 cups).
2. Melt butter in nonstick pan and add zucchini.
3. Saute zucchini, stirring often, about 3 minutes.
4. Add garlic and saute for 1 minute.
5. Add tomatoes and continue to saute, stirring often, for about 2 more minutes.
6. Toss with salt and serve.
