Ingredients for 4 servings:
1. 1 (14 1/2 ounce) can diced tomatoes or 1 (14 1/2 ounce) can ready-cut tomatoes
2. 2 1/2 tablespoons lemon juice
3. 2 teaspoons garlic salt
4. 2 tablespoons olive oil
5. 1/8 teaspoon ground black pepper
6. 1 1/2 lbs cod fish fillets
7. 2 tablespoons pine nuts, toasted
Directions:
1. Preheat oven to 425 degrees.
2. in a 13x9x2-inch baking dish, combine tomatoes, lemon juice, garlic salt, olive oil and pepper; mix well.
3. Top with fish fillets in a single layer.
4. Spoon some tomato mixture over fish.
5. Bake 15 minutes or until sauce is bubbling and fish flakes easily with a fork.
6. Garnish with pine nuts.
