Ingredients for 12 servings:
1. 1 1/2 cups whole wheat flour
2. 3/4 cup ground flax seeds
3. 3/4 cup oatmeal
4. 1 cup brown sugar
5. 2 teaspoons baking soda
6. 1 teaspoon baking powder
7. 1/2 teaspoon salt
8. 2 teaspoons cinnamon
9. 1 cup shredded carrot
10. 1 cup finely chopped peeled apple
11. 1/2 cup raisins
12. 3/4 cup milk
13. 2 eggs
14. 1 teaspoon vanilla
Directions:
1. *groundflax seed (measure after grinding; coffee grinder is good for grinding flax seed) Preheat oven to 375.
2. Lightly grease muffin tin.
3. Combine all ingredients.
4. Spoon batter into muffin tins about 3/4 full.
5. Bake for 15-20 minutes.
6. Makes 12-14 muffins depending on size.
