Ingredients for 4 servings:
1. 1 cup low sodium chicken broth
2. 1 (15 ounce) can black beans, rinsed and drained
3. 1 (15 ounce) can red kidney beans, rinsed and drained
4. 3/4 cup mild salsa
5. 2 garlic cloves, minced
6. 1 lb boneless skinless chicken breast, cut into bite-sized pieces
Directions:
1. In a 13 x 9 inch baking pan, combined the broth, beans, salsa, and garlic.
2. Add the chicken and mix everything together.
3. Bake at 350F for 45 minutes, stirring after the first 20 minutes.
