Ingredients for 1 servings:
1. 3 cups all-purpose flour
2. 1 teaspoon baking soda
3. 1/4 teaspoon baking powder
4. 1 teaspoon salt
5. 1 tablespoon cinnamon
6. 3/4 cup vegetable oil
7. 3 eggs, slightly beaten
8. 2 cups sugar
9. 2 cups pears, peeled and grated
10. 1 cup nuts, chopped (or less)
11. 2 teaspoons vanilla
Directions:
1. Combine flour, soda, baking powder, salt and cinnamon in a large bowl.
2. Make a well in center of mixture. Combine oil, eggs, sugar, pears, nuts and vanilla.
3. Add to dry ingredients, st irring just until moistened.
4. Spoon mixture into 2 greased 8 1/2 x 4 1/2 x 3 inch loaf pans.
5. Bake at 325 degrees for 1 hour and 10 minutes or until done. Cool 10 minutes before removing from pans.
6. Yields: 2 loaves.
7. Good with coffee.
