Ingredients for 6 servings:
1. 1/3 cup rock sugar
2. 2/3 cup water
3. 2 inches gingerroot, sliced thin
4. 3 ripe mangoes, peeled, pitted, and sliced
5. 3 tablespoons butter or 3 tablespoons margarine
Directions:
1. Combine sugar, water, and ginger in a small pot and cook until the sugar is dissolved.
2. Remove and let cool; when the syrup is completely cooled, remove and discard the ginger.
3. Brush the mango slices with melted butter and grill until slightly charred (2-3 minutes), turning once.
4. Place the mangoes in a bowl, add the syrup, cover and let cool.
5. When ready to serve, break the mango into bite-sized chunks; garnish with mint sprigs if desired.
