Ingredients for 6 servings:
1. 6 ounces whole wheat linguine
2. 1 lb boneless skinless chicken breast, diced into bite-sized pieces
3. 2 tablespoons cajun seasoning
4. 1 green bell pepper, diced
5. 1 red bell pepper, diced
6. 8 ounces fresh sliced mushrooms
7. 2 green onions, thinly sliced
8. 1 cup fat-free half-and-half
9. 3/4 teaspoon basil
10. 3/4 teaspoon lemon pepper
11. 3/4 teaspoon salt
12. 3/4 teaspoon garlic powder
13. 1/4 teaspoon black pepper
14. 1/4 cup parmesan cheese
Directions:
1. Cook linguine until al dente.
2. Coat chicken with cajun seasoning and saute until cooked.
3. Add peppers, mushrooms and green onions; cook for 2-3 minutes.
4. Reduce heat and stir in half-and-half.
5. Add seasonings and heat through.
6. Serve over warm linguine and top with Parmesan cheese.
7. **Could add a bit of cornstarch & water with seasonings, if you want a thicker sauce. **.
