Ingredients for 12 servings:
1. 1 1/2 cups all-purpose flour
2. 2 teaspoons baking powder
3. 1/2 teaspoon salt
4. 1 egg
5. 1/2 cup sugar
6. 3 tablespoons nonfat yogurt
7. 1 tablespoon vegetable oil
8. 2 tablespoons vanilla extract
9. 1/2 cup nonfat milk
10. 2 cups blueberries
11. 1 teaspoon lemon extract
Directions:
1. Preheat oven to 350 and use flour version of cooking spray a 12 cup muffin pan.
2. Combine Dry Ingredients.
3. Combine all other ingredients, except blueberries.
4. Combine slowly, as with other muffin recipes.
5. fold in blueberries.
6. Fill muffin cups 1/2 way
7. Bake in preheated oven for 25 mins or until golden brown, and springy to touch.
