Banana Bread With Coconut Milk

Ingredients for 1 servings:
1. 4 ripe mashed bananas
2. 7 1/2 ounces cans coconut milk (high quality, thick, not the watered down kind)
3. 2 eggs
4. 1/2 cup olive oil
5. 2 teaspoons baking powder
6. 2 teaspoons baking soda
7. 1 teaspoon ground cinnamon
8. 1/2 teaspoon nutmeg
9. 2/3 cup packed brown sugar
10. 2 -2 1/2 cups flour

Directions:
1. Mix wet ingredients, and dry ingredients.
2. Mixture will be lumpy.
3. Pour mixture into a greased loaf pan, and bake at 350 for 30-40 minutes, or until a cake tester inserted in the middle of the loaf comes out clean.
