Ingredients for 8 servings:
1. 1 cup diced bacon (about 3 strips)
2. 1 cup diced celery
3. 1 small onion, chopped
4. 1 tablespoon salt (or less)
5. 3 tablespoons all-purpose flour
6. 1/3-2/3 cup sugar (or less depending on how sweet you like it)
7. 2/3 cup vinegar
8. 1/2 teaspoon fresh ground pepper (to taste)
9. 1 1/3 cups water
10. 8 cups sliced cooked potatoes
Directions:
1. Set oven to 350 degrees F.
2. Butter a 3-quart baking dish.
3. Fry bacon; drain drippings from skillet reserving 1/4 cup.
4. Add celery, onions, salt and flour.
5. Simmer, stirring constantly.
6. Add sugar, vinegar, pepper and water.
7. Bring to a boil.
8. Toss bacon and potatoes together in the baking dish.
9. Pour celery mixture over top.
10. Cover and bake for 30 minutes.
