Ingredients for 4 servings:
1. 4 tomatoes, seeded and diced
2. 1 cup water
3. 1 garlic clove, minced
4. 1 teaspoon onion, minced
5. 1 teaspoon olive oil
6. 1 teaspoon basil
7. salt
8. pepper
Directions:
1. Add olive oil to a soup pot and add onion and garlic. Saute till transparent.
2. Add tomatoes and water and bring to a simmer.
3. Add basil and salt and pepper to taste.
4. Simmer at least 20 minutes.
5. To serve, ladle into bowls and garnish with a cream swirl and a sprig of parsley.
