Ingredients for 6 servings:
1. 125 g cracked wheat
2. 1 cup fresh parsley, finely chopped
3. 4 spring onions, finely chopped
4. 250 g tomatoes
5. 1/3 cup of fresh mint, finely chopped
6. 1 onion, finely chopped
7. 1/3 cup lemon juice
8. 1/3 cup extra virgin olive oil, preferably
9. 1 pinch chili powder
Directions:
1. Soak wheat in cold water for a couple of hours.
2. Drain and rinse well.with cold water.
3. Dry thoroughly. I use paper towels to pat as dry as possible.
4. Mix all ingredients together.
5. Refrigerate until required.
