Ingredients for 12 servings:
1. 6 sweet potatoes
2. 1 (8 ounce) package cream cheese, softened
3. 1/3 cup brown sugar
4. 2 tablespoons margarine
5. 1 tablespoon vanilla extract
6. 3/4 teaspoon salt
7. 1/2 teaspoon pepper
8. 1/3 cup walnuts, chopped
Directions:
1. Preheat oven to 350 degrees F.
2. Poke holes in potatoes and bake for 1 hour, or until soft.
3. Meanwhile, in a large bowl combine cream cheese, brown sugar, margarine, vanilla, salt and pepper.
4. Cut potatoes in half and scoop flesh into the bowl with the other ingredients. Mix well and fold in walnuts.
5. Bake in a 9×13 pan sprayed with non-stick cooking spray for 5 more minutes, or until heated through.
