Ingredients for 16 servings:
1. 2 1/2 cups buttermilk biscuit mix
2. 1/3 cup margarine, softened
3. 1 cup sweet potato, cooked and mashed
4. 1/2 cup milk
Directions:
1. Preheat oven to 450°F.
2. Stir together all ingredients until soft dough forms.
3. Place dough on surface dusted with biscut baking mix. Roll dough in baking mix to coat. Shape into a ball.
4. Knead 3-4 times.
5. Roll 1/2 inch thick.
6. Cut with 2 1/2-inch cutter dipped in baking mix.
7. Place with edges touching on ungreased cookie sheet.
8. Bake 10-12 minutes or until golden brown.
