Ingredients for 4 servings:
1. 4 large sweet potatoes, peeled and shredded (about 6 cups)
2. 4 large eggs, slightly beaten
3. 3 cups milk
4. 1 1/3 cups light brown sugar
5. 1 teaspoon cinnamon
6. 1/2 teaspoon ground cloves
7. 1/2 teaspoon ground ginger
8. 1 teaspoon salt
9. 1/4 teaspoon cayenne pepper
Directions:
1. Preheat oven to 350 degrees F.
2. Whisk together eggs and milk; stir in sugar until well mixed.
3. Fold in potatoes.
4. Add seasonings.
5. Butter a 13 x 9 inch baking dish; pour in potato mixture.
6. Bake in preheated oven for an hour or until potatoes are golden and puffy.
