Ingredients for 6 servings:
1. 1 garlic clove (minced)
2. 1 teaspoon salt
3. 1/4 teaspoon pepper
4. 2 teaspoons prepared mustard
5. 1/4 cup olive oil or 1/4 cup vegetable oil
6. 2 tablespoons tarragon vinegar
7. 6 firm ripe tomatoes, sliced
8. 1 sweet onion, sliced thin
Directions:
1. Put all but tomato and onion in a small food processor or blender.
2. Blend well for 30 seconds to a minute.
3. Put tomato and onion slices in a plastic bag.
4. Pour the dressing over onions and tomatoes.
5. Refrigerate till cold.
6. Pour out on a serving plate or bowl.
7. Serve cold.
