Ingredients for 4 servings:
1. 1 1/4 cups uncooked pasta, i like penne
2. 1 tablespoon olive oil
3. 2 cloves garlic, minced
4. 2 (14 ounce) cans tomatoes, undrained
5. 1 (15 ounce) can kidney beans or 1 (15 ounce) can garbanzo beans, drained
6. 1 1/2 teaspoons italian seasoning
7. 1 teaspoon sugar
8. 1 (10 ounce) package fresh spinach, chopped
9. 1/2 cup feta cheese
10. 1/4 cup sliced ripe olives
Directions:
1. Cook pasta according to pkg instructions.
2. Meanwhile, heat oil in lg skillet or Dutch oven.
3. Add garlic; cook and stir 1 minute.
4. Add tomatoes, beans, Italian seasoning and sugar.
5. Bring to a boil; reduce heat and simmer 10 minutes.
6. Add spinach; cook 3 minutes.
7. Put drained pasta on serving plates.
8. Top with tomato mixture.
9. Sprinkle with feta and olives.
