Ingredients for 8 servings:
1. 3 lbs yukon gold potatoes
2. 4 cloves garlic, peeled
3. 1/2 cup skim milk
4. 1/2 teaspoon salt
5. 1/4 teaspoon pepper
Directions:
1. Cut potatoes into pieces (the smaller they are, the faster they will cook).
2. Place potatoes and garlic in a large saucepan.
3. Bring to a boil.
4. Cook on medium heat for 15 minutes, or until potatoes are tender.
5. Drain, but do not discard garlic.
6. Add remaining ingredients, and mash with a potato masher until smooth.
7. Add additional milk if necessary.
8. If desired, season with additional salt and pepper.
