Ingredients for 10 servings:
1. 1 lb navy beans, soaked overnight
2. 1/2 lb canadian back bacon, cut in 3 pieces
3. 1 tablespoon dry mustard
4. 1 large onion, chopped (1 cup)
5. 1/2 cup ketchup
6. 1 tablespoon tomato paste
7. 1/4 cup molasses
8. 1/4 cup maple syrup
9. 3 garlic cloves, minced
10. 6 cups hot water
11. salt and pepper
Directions:
1. Drain beans and place them into a covered earthenware pan.
2. Add remaining ingredients and hot water, mix well.
3. Cover and cook in the oven, at 300°F, for 3 hours.
4. Remove cover and continue to cook for 1 hour or more until beans are tender and sauce is thickened.
