Manicotti Florentine

Ingredients:

  • 8 Manicotti Pasta Tubes, Uncooked
  • 2 Tbsp Extra Virgin Olive Oil
  • 1 cup Chopped Mushrooms
  • 1⁄4 cup Chopped Onion
  • 2 Cloves Garlic, Minced
  • 11⁄2 cups Chopped Fresh Spinach
  • 1 Egg White
  • 3⁄4 cup Grated Parmesan Cheese
  • 2 cups Bottled Tomato-Basil Spaghetti Sauce, Divided
  • Freshly Chopped Parsley (optional)

Directions:

  1. Cook manicotti tubes according to package directions. Drain and set aside.
  2. Preheat oven to 375°.
  3. Heat olive oil in large skillet over medium-high heat.
  4. Sauté mushrooms, onion, and garlic 2 minutes.
  5. Add spinach and sauté until wilted.
  6. Remove from heat and cool slightly.
  7. Stir in egg white, cheese, and salt and pepper to taste.
  8. Stuff spinach mixture into cooked tubes.
  9. Spread 1 cup of the sauce in an 11″x7″x2″ baking dish.
  10. Place stuffed tubes over sauce.
  11. Spoon remaining sauce over tubes.
  12. Cover and bake 30-35 minutes.
  13. Garnish with parsley, if desired.
