Ingredients for 6 servings:
1. cooking spray
2. 8 ounces elbow macaroni, uncooked
3. 10 3/4 ounces 98% fat free cream of celery soup
4. 1 cup fat-free mayonnaise
5. 8 ounces low-fat cheddar cheese, shredded
6. 1/2 medium sweet red pepper, chopped
7. 6 ounces pimientos, chopped
8. 4 ounces whole wheat crackers, crumbled
Directions:
1. Preheat oven to 400 degrees.
2. Coat 9×10 baking dish with cooking spray.
3. Cook macaroni in a large pot of boiling water until just tender (approx. 7 min).
4. Drain macaroni and transfer to a large pot.
5. Add soup, maonnaise, cheese, pepper and pimentos; mix well to combine with pasta.
6. Transfer mixture to prepared baking dish and top with cracker crumbs.
7. Bake, uncovered, until top is golden, about 20 to 25 minutes.
