
Ingredients:
2 Onions
1/4 Olive Oil
4 Garlic
6 Celery Ribs
3 Carrots
1 Curry Powder
1 Ground Cumin
1 Salt
1 Pepper
1/2 Dried Thyme
5 Water
5 Chicken Broth
2 Bay Leaves
2 Dark Brown Sugar
2 Ketchup
3 Canned Plum Tomatoes
2 Lentils
1/2 Dry Sherry
Directions:
Cook onions in oil over moderate heat, stirring occasionally, until softened; add garlic, celery and carrots.
Cook vegetables 10-15 minutes, until softened.
Add all remaining ingredients and simmer 1 1/2 – 2 hours or until lentils are tender.
