Ingredients for 4 servings:
1. 4 boneless skinless chicken breasts
2. 1 tablespoon honey
3. 6 slices gingerroot (thin slices)
4. 3 tablespoons soy sauce
5. 1 lemon, juice of
Directions:
1. Line a large ovenproof pan and arrange the ginger slices on the bottom.
2. Place the chicken breasts on top of the ginger.
3. Mix the soy sauce, lemon juice, and honey; pour over chicken.
4. Roast in 350* oven for 25 min or until breasts are tender.
