Ingredients for 6 servings:
1. 1 (10 ounce) package frozen chopped spinach
2. 8 ounces ricotta cheese
3. 1/2 cup grated parmesan cheese
4. 1 cup chopped mushroom (fresh or canned)
5. 2 tablespoons minced onions
6. 1/4 teaspoon oregano
7. 1/4 teaspoon salt
8. 1 egg, slightly beaten
9. 12 slices prosciutto or 12 slices bacon, thin
Directions:
1. Cook spinach; drain well.
2. In medium bowl, combine spinach, Parmesan, mushrooms, onions, oregano, salt and egg.
3. Spray miniature muffin tins with Pam.
4. Cut prosciutto into quarters.
5. Press 1/4 slice into muffin tin, pressing against bottom and sides.
6. Spoon cheese mixture into cup about 2/3 full.
7. Bake 20-25 minutes in preheated 375 degree oven.
8. Remove.
9. Can be frozen.
