Ingredients for 2 servings:
1. 1 cup dry pasta (I like spiral)
2. 1 cup cooked ham, diced (OR cooked chicken)
3. 1/2 cup diced tomato
4. 5 tablespoons honey
5. 3 tablespoons mustard (not the bright yellow stuff)
6. 2 tablespoons wine vinegar
7. 1/2 teaspoon ground black pepper
8. 1 garlic clove, minced
9. 1/4 cup cheddar cheese
Directions:
1. Cook pasta in 2 quarts of salted boiling water until done to taste (for me, 8 minutes is right).
2. While pasta is cooking, add mustard, honey, vinegar, pepper, and garlic to the bottom of a serving dish.
3. Add hot drained cooked pasta, ham, and tomatoes to the dish and toss until coated by the dressing.
4. Top with cheddar cheese.
