Ingredients for 8 servings:
1. 7 cups baking potatoes, cubed, peeled
2. 6 cloves garlic, peeled
3. 1/2 cup 2% low-fat milk
4. 1/4 cup parmesan cheese, grated
5. 2 tablespoons margarine
6. 1/2 teaspoon salt
7. 1/8 teaspoon pepper
Directions:
1. Place potatoes and garlic in a sauce pan, cover with water and bring to a boil. reduce heat and simmer for 20 min and drain.
2. Return potatoes and garlic to the pan, add remaining ingredients.
3. Beat at medium speed or mash until smooth.
