Ingredients for 4 servings:
1. 3 -4 lbs elk roast or 3 -4 lbs beef brisket
2. 1 onion, sliced
3. 1/2 cup chili sauce
4. 2 tablespoons brown sugar
5. 1 clove garlic
6. 12 -24 ounces beer
Directions:
1. Preheat oven to 350.
2. Place meat in a 9×13 inch pan or roasting pan.
3. Cover with onion slices.
4. In a bowl, combine the chili sauce, brown sugar, garlic, and beer.
5. Pour over the meat.
6. Bake for 3½-4 hours.
7. Add barbecue sauce to any leftover meat, sliced, and serve on crusty rolls!
