Cheesy Egg Puffs

Ingredients for 1 servings:
1. 1/2 lb fresh mushrooms, sliced
2. 4 green onions, chopped
3. 1 tablespoon butter or 1 tablespoon margarine, plus
4. 1/2 cup butter or 1/2 cup margarine, divided
5. 1/2 cup all-purpose flour
6. 1 teaspoon baking powder
7. 1/2 teaspoon salt
8. 10 eggs, lightly beaten
9. 16 ounces shredded monterey jack cheese
10. 2 cups small curd cottage cheese

Directions:
1. In a skillet, saute the mushrooms and onions in 1 tablespoon butter until tender.
2. In a large bowl, combine the flour, baking powder and salt.
3. In another bowl, combine eggs and cheeses.
4. Melt remaining butter; add to egg mixture.
5. Stir into dry ingredients along with mushroom mixture.
6. Fill greased muffin cups three-fourths full.
7. Bake at 350°F for 35-40 minutes or until a knife inserted near the center comes out clean.
8. Carefully run the knife around edge of muffin cups before removing.
