CARROT CAKE

 

Ingredients for 20 servings:
1. 1 1/2 cups oil
2. 2 cups raw sugar
3. 4 eggs
4. 1 teaspoon vanilla essence
5. 2 teaspoons baking soda
6. 2 cups wholemeal flour
7. 1 1/2 teaspoons cinnamon
8. 1 teaspoon mixed spice
9. 1 teaspoon salt
10. 3 cups grated carrots
11. 1 cup walnut pieces
12. 1 cup chopped dried apricot
13. 125 g cream cheese
14. 50 g butter
15. 3/4 cup icing sugar
16. 1 lemon, zest of
17. juice 1/2 lemon
18. 1/2 cup chopped dried apricot
19. 1/2 cup walnuts

Directions:
1. Cake:
2. Set oven to bake 160 deg.
3. Mix oil and sugar, adding in eggs one at a time and vanilla essence.
4. Add flour, cinnamon, mixed spices, salt, carrot, walnut pieces and apricots – mix well.
5. Add baking soda and stir to just combine.
6. Pour mix into a springform cake tin.
7. Bake for approximately 55 minutes, or until a skewer poked through the middle comes out clean.
8. Icing:
9. Beat together softened butter and cream cheese.
10. Add in icing sugar until desired consistency is reached.
11. Add zest and juice of a lemon.
12. Top with apricots and walnuts.
