• 3/4 c Salad oil
  • 1 c Sugar
  • 1 1/2 c Sifted flour
  • 1 ts Soda
  • 1 ts Baking powder
  • 1 ts Cinnamon
  • 1/2 ts Salt
  • 2 Eggs
  • 1 c Grated raw carrots
  • 1/2 c Chopped pecans

Combine first eight ingredients and mix well. Fold in carrots and
pecans. Pour into greased and floured 9x5x3 inch loaf pan. Bake in a
350 degree oven for between 50 and 60 minutes. Remove from
oven and let cool for 5 minutes before removing from the pan. Remove
from the pan and finish cooling on wire rack.
