Ingredients for 6 servings:
1. 1 small onion, sliced
2. 2 tablespoons butter
3. 2 tablespoons flour
4. 1 teaspoon sugar
5. 1 cup tomato juice
6. 1/2 teaspoon salt
7. 1/8 teaspoon pepper
8. 2 (10 ounce) packages frozen Brussels sprouts or 1 1/4 lbs fresh Brussels sprouts, cooked and drained
9. 1/4 cup shredded cheddar cheese
Directions:
1. In a skillet, saute onion in butter until tender. Remove onion and set aside.
2. Blend flour into the drippings.
3. Add tomato juice; cook and stir over low heat until thickened and smooth. Stir in the sugar, salt, pepper and onion.
4. Arrange the brussels sprouts in a greased 1 quart baking dish; top with the tomato sauce.
5. Sprinkle with cheese.
6. Bake, uncovered, at 350 degrees for 15 minutes.
