Ingredients:
- 5 Tbsp Peanut Oil
- 1 lb Boneless Lean Beef (Top Sirloin): Thinly Sliced Cross Grain, 1⁄8″ Thick, 1″Square
- 2 Tbsp Soy Sauce
- 1 tsp Sugar
- 1 tsp Fresh Ginger
- 1 Clove Garlic
- 1 Medium Onion: Cut In 1″ Squares
- 1⁄4 lb Mushrooms: Cut Through Stems
- 1 Medium Green Pepper: Cut In 1″ Squares
- 1 Basket Cherry Tomatoes: Halved
Sause Ingredients:
- 1 Tbsp Corn Starch
- 1 Tbsp Sugar
- 1⁄2 tsp Salt
- 2 Tbsp Soy Sauce
- 1⁄2 cup Beef Broth
Directions:
- Blend sauce ingredients. Set aside.
- Mix beef with soy sauce, sugar, ginger, and garlic.
- Heat pan, add 1 Tbsp oil. When hot add half meat mixture.
- Stir fry until brown (about two minutes), take out.
- Add 1 Tbsp oil, repeat with other half of meat mixture.
- Add 3 Tbsp oil. When hot add onion and mushrooms.
- Stir fry about two minutes.
- Add green pepper.
- Stir fry about thirty seconds.
- Return meat to pan.
- Add tomatoes.
- Stir fry for a few seconds.
- Add sauce.
- Cook and stir until it boils and thickens, about three minutes.
- Serve over rice.
