Ingredients for 1 servings:
1. 2 eggs
2. 1 3/4 cups flour
3. 2 teaspoons baking powder
4. 1/4 teaspoon baking soda
5. 1/2 teaspoon salt
6. 5 1/2 tablespoons butter, softened
7. 2/3 cup sugar
8. 3 very ripe bananas, mashed
9. 1 cup chopped pecans
Directions:
1. Beat eggs in a small bowl.
2. Sift together flour, baking powder, baking soda and salt in a medium bowl.
3. Cream butter and sugar in a large bowl. Add eggs and beat well.
4. Gradualy add flour and bananas, alternating, untill fully incorporated. Stir in nuts.
5. Pour into a greased loaf pan and bake for 70 minutes or until toothpick inserted in the center comes out clean.
