Ingredients for 1 servings:
1. 36 cherry tomatoes
2. 1 ripe avocado, pitted, peeles and cut into chunks
3. 2 tablespoons lemon juice
4. 1 tablespoon onion, finely chopped
5. 1/2 teaspoon salt
6. 1/2 teaspoon chili powder
7. 1 dash garlic powder
8. fresh cilantro, if desired
Directions:
1. Cut top off each cherry tomato.
2. Scoop out tomatoes with melon baller, leaving enough for a firm shell.
3. Cut small slice from bottom so tomatoes stand upright.
4. Place remaining ingredients except cilantro in blender.
5. Cover and blend until smooth.
6. Carefully spoon 1 teaspoons avocado mixture into each tomato.
7. Garnish with cilantro.
