• 3 lg Eggs
  • 3 c Milk
  • 3 c Flour (all-purpose)
  • 2 tb Brown sugar
  • 1 ts Salt
  • 2 ts Cinnamon
  • 2 md Apples (any type works
  • 3 ts Baking powder (heaping
  • 2 ts Vanilla extract
  • 1 ts Cooking oil

NOTE: The order of adding ingredients is important.

Beat the eggs in a mixing bowl with a fork and add the milk slowly.

Add the brown sugar, cinnamon and salt and stir.

Add the flour and stir until most of the large lumps are gone.

Add coarsely grated apples.

Add the baking powder, vanilla and cooking oil and lightly stir.

Allow to sit for 3-4 minutes. Mixture will bubble.

DO NOT STIR MIXTURE AGAIN.

Pour onto very hot griddle making 5″ diameter pancakes.

Cook about 1 minute per side (until bubbles form on top, or until
brown flipping once. Set cooked pancakes into warming oven while
others are being cooked.

Serve with warm maple syrup and butter.

For a basic pancake recipe, eliminate the apples and cinnamon.

Makes about 16 5″ pancakes, or about 4 per serving.

NOTE: 1) Blueberries can be substituted for the apples – just remove cinnamon from the mixture.
2) Most other berries or fruit will burn if added INTO the mixture. For these, make the basic pancake recipe and slice the fruit
: as a side dish which can be added as a topping to the pancake.
: Peaches work very well this way.
: Strawberries and raspberries are best served as a compote to be
: used as a topping to the basic pancake.
