Ingredients for 12 servings:
1. 3 garlic cloves, chopped
2. 1 large egg
3. 1 tablespoon fresh lemon juice
4. 1/2 teaspoon salt
5. 1 pinch fresh ground black pepper
6. 1/2 cup extra virgin olive oil
7. 1 tablespoon parsley sprig
Directions:
1. Combine garlic, eggs, lemon juice, parsley (optional), salt and pepper in a good processor and puree.
2. With processor running, slowly add olive oil in a continuous stream until mixture has formed a thick emulsion.
3. Chill.
